Will my website go down during the change?
No. I copy every DNS record into Cloudflare first and check it, and only then change the nameservers. Your site keeps serving the whole time.
Will my email keep working?
Yes. MX, SPF, DKIM and DMARC records are copied over and left unproxied, so your mail keeps flowing normally.
Do you need my Cloudflare and domain login?
Yes. Cloudflare access, plus registrar access to change nameservers. Use a temporary password and change it after delivery.
