Which operating system should I choose?
You should select Ubuntu 16, 18, 20 or Debian 9, 10.
Do I need to have a domain name?
No, it's not mandatory. You can run it with only IP too. But it's good to have domain name. If root domain is live somewhere else, you can just create an A record in DNS for azuracast and use that subdomain here on Azuracast. A subdomain is absolutely fine for Azuracast.
Will it work with only a subdomain ?
Yes ofcourse. it will work with subdomain without any issue.
