Why should you choose to built your wordpress site with gutenberg blocks instead of traditional way (which is through page builders like elimentor, devi...) is

because of

1. better performance and fast page speeds,
2. customize the blocks the look and feel of design,
3. No vendor lock in as you can download other gutenberg block plugins,
4. Wordpress as an ecosystem is moving towards this and FSE(full site editor), hence you can expect more sites migrating to this.
5. You can do almost everything that you can do with traditional page builder.
