Ahh ogbono soup proper Nigerian comfort food. Heres a simple, tasty way to make it at home.
Ingredients
- Ground ogbono (wild mango seeds)
- Palm oil
- Assorted meat (beef, goat meat, ponmo, tripe your choice)
- Stockfish or dry fish
- Crayfish (ground)
- Pepper (fresh or dry)
- Seasoning cubes
- Salt
- Ugwu / spinach / bitterleaf (optional but nice)
- Water or meat stock
How to Cook
- Boil your meat & fish
- Season with salt, seasoning cubes, onions (optional). Cook till soft. Keep the stock.
- Heat palm oil
- Pour palm oil into a pot and warm slightly (dont bleach it).
- Add ogbono
- Stir in the ground ogbono and mix till it melts into the oil.
- Add meat stock gradually
- Pour in your meat stock bit by bit while stirring this is where the draw texture comes from.
- Add meats & fish
- Put in the cooked meat, stockfish, and dry fish.
- Season
- Add crayfish, pepper, seasoning cubes, salt to taste.
- Simmer
- Let it cook for about 1015 minutes. Stir gently.
- Add vegetables (optional)
- Toss in ugwu or spinach near the end and cook for 23 minutes.
