Most "authentic Nigerian recipe" content online is written by someone who's 

never actually eaten amala with their hands. Mine isn't.

I grew up eating this. I know the difference between amala that's stiff 

because it's fresh vs stiff because it's overcooked, and I know why your 

ewedu turns bitter if you rush the blending.
