THE MOST IMPORTANT FIRST STEP

To be able to edit a documentary properly, you must tag every piece of footage you have and make transcriptions of everything that is said, so you don't anything that may be buried in the hours of footage.

Documentary editing relies on your editor's ability to organize all your footage in a manner that as soon as you say: Hey there is a shot where that person said x,y,z . And on hearing that, I should be able to find that exact shot within seconds.
