How do I edit or change the values of the custom field?
You can edit the values by editing the product normally in the admin and navigate to the custom field section.
Can I change the custom field name in the future?
Yes, but it will not show to the checkout page's cart anymore. And if that custom field was intentionally hidden in the product page view, it will now be visible to customers. If you wish to change it, please contact me so that I can make the changes to the theme files. Another charges may apply.
