What software is needed to view the u.v map?
So when I deliver I deliver a .blend file, a fbx and a PNG. you can see the uv in blender, in unreal engine and probably other engine that I know less of. And the PNG are portable to anything, but png aren't metadata they are to paint your texture in any paint software. I recommend blender.
