Having a dynamic model means that you have flexible assumptions or inputs. You are able to change certain inputs and the financials will recalculate automatically. This gives you the flexibility to run scenarios or generate new sets of financials.

I do not use templates. While my flow and style are pretty consistent from model to model, every model is built up to the client's needs. This offers the most robust and agile model possible. It is a lot easier to build to suit, than forcing data into a generic model. All industries are different.
